The Food Safety Lab: Food Truck Trouble! introduces students to the molecular diagnostic techniques used throughout today's food production and agricultural industries to identify foodborne pathogens and protect the food supply. Working through a simulated E. coli outbreak investigation, students analyze evidence from multiple food sources to determine the origin of contamination while learning how rapid DNA based testing supports food safety, agricultural biosecurity, and public health.

Students perform PCR, restriction enzyme digestion, and gel electrophoresis to differentiate bacterial strains and identify the contaminated food source. Along the way, they develop practical laboratory skills including micropipetting, DNA analysis, molecular diagnostics, and interpretation of electrophoresis results.

Students gain a deeper understanding of foodborne disease prevention, traceability, contamination control, and the role biotechnology plays in maintaining a safe and reliable food supply. This investigation is especially well suited for Agricultural Science, Food Science, Biotechnology, and Veterinary Science pathways within Career and Technical Education programs.
