Understand the Structure and Function of Fats

• Understand the difference between saturated and unsaturated fats
• Visually see how triglyceride synthesis occurs

As students construct models of glycerol and fatty acid sub-units and then put them together to form lipids, they will be able to visualize how triglyceride synthesis works. In the process, they will also learn the difference between saturated fats and unsaturated fats and how these two types of lipids can affect a healthy diet.
